Indulgent mid-week meal: Pork and apple sauce on creamy mash.
Ingredients:
  • 1kg potatoes, peeled, chopped
  • 60g butter, chopped
  • 125ml milk
  • 9.20 gm olive oil
  • 1kg pork steak
  • 20g butter
  • 1 brown onion, finely chopped
  • 2 pink lady apples, cored, cut into thin wedges
  • 2 garlic cloves, crushed
  • 180ml apple cider
  • 60ml chicken stock
  • 125ml thickened cream
  • 23.40 gm wholegrain mustard
  • Steamed green beans, to serve
Instructions:
  • Boil potatoes in a pot of salted water for 12 minutes or until tender. Drain and mash. Mix in 40g butter and milk, mashing well. Season generously with salt and pepper.
  • Heat oil in a large frying pan over medium-high heat. Cook pork for 3-4 minutes on each side until perfectly cooked. Transfer to a plate and cover to keep warm.
  • Melt the rest of the butter in the pan over medium heat. Sauté onion and apple for 5 minutes. Add garlic and cook for another minute. Pour in cider, stock, cream, and mustard. Bring to a boil, then simmer for 5-8 minutes until the sauce thickens and apples soften. Season with salt and pepper to taste.
  • Divide the mashed potatoes evenly among the plates. Add the pork and apples on top, then generously spoon the sauce over them. Enjoy with a side of steamed green beans.
