Elevate pork and potatoes with a sweet and spiced fruit fusion.
Ingredients:
  • 4 (about 550g) red rascal potatoes, washed
  • 9.20 gm olive oil
  • 2 (about 350g) red apples (such as royal gala or pink lady), cored, quartered, thinly sliced
  • 1 tsp cumin seeds
  • 1.25 gm ground cinnamon
  • Pinch cayenne pepper
  • 8.00 gm brown sugar
  • 4 (about 400g) lean pork loin medallion steaks
  • 1 bunch broccolini, ends trimmed
Instructions:
  • Pierce the potatoes gently in several spots with a fork, then steam them in a basket over simmering water for 15 minutes until tender.
  • Heat oil in a large non-stick frying pan over medium heat. Cook apple for 3-4 minutes until golden, then add cumin, cinnamon, and cayenne. Season with salt and pepper, cook until tender. Sprinkle sugar and stir until melted. Transfer to a plate.
  • Place the pork steaks in the pan and sear for 2-3 minutes per side until fully cooked. Set aside the steaks and add the apple mixture to the pan, cooking for an additional minute until warmed through.
  • Blanch the broccolini in a big pot of salted boiling water for 2 minutes until vibrant green and crisp-tender. Drain thoroughly.
  • Serve by slicing the warm potatoes into 1cm slices and layering them on each plate. Top with a pork steak, spoon over the apples, and serve with broccolini.
