Pork and apple with steamed vegetables

Whip up a quick and wholesome pork steak and veggies dish in just 15 minutes - ideal for busy weeknights!
Ingredients:
  • 40g (2 tbsp) butter or margarine
  • 1 small red onion, peeled, finely chopped
  • 1 large Granny Smith apple, peeled, cored, halved, thinly sliced
  • 1/2 tsp dried thyme leaves
  • Salt & ground black pepper, to taste
  • medium golden button squash, quartered
  • small head (about 250g) broccoli, cut into large florets
  • 8 baby carrots, peeled
  • 20.00 ml vegetable or canola oil
  • 4 (about 600g) pork butterfly steaks
Instructions:
  • In a large frying pan over medium-high heat, sizzle the butter or margarine, then tumble in the onion, apple, thyme, and season with salt and pepper. Cover, stirring occasionally, until the apple is tender, about 3-4 minutes. Remove from pan and set aside.
  • Steam squash, broccoli, and carrots over gently boiling water for 6-8 minutes until tender. (Check out microwave tip). Heat vegetable or canola oil in a frying pan over medium heat. Sear pork steaks for 2 minutes per side until well sealed. Cover steaks with the apple mixture and cook for an additional 3-4 minutes until pork is cooked through. Serve with the steamed vegetables.
