Savory pork and apple stew with potatoes simmered in red wine, beef broth, shallots, and herbs for cozy winter comfort.
Ingredients:
  • 0.25 cup all-purpose flour
  • 1 pound boneless pork shoulder, cubed
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 teaspoons dried basil
  • 0.5 teaspoon ground black pepper
  • 1 pound new potatoes, cut into 1/2 -inch cubes
  • 2 cups dry red wine
  • 2 (14 ounce) cans beef broth
  • 1 large Granny Smith apple - peeled, cored and diced
Instructions:
  • In a Dutch oven over medium-high heat, warm oil. Coat cubed pork in flour in a medium bowl, shaking off any extra. Brown pork on all sides in the hot oil. Transfer to a plate and set aside.
  • Lower heat to medium-low and gently melt butter in the pot. Add onion, garlic, and shallot; sprinkle with thyme, rosemary, basil, salt, and pepper. Sauté until onion is soft and see-through, around 5 minutes. Stir in potatoes and cook for an additional 5 minutes.
  • Combine wine, broth, pork, and apple in the pot. Cover and simmer until the potatoes and apple are tender, approximately 45 minutes.
