Slow cooker apple pork - the perfect pairing for moist and flavorful meat.
Ingredients:
  • 18.20 gm olive oil
  • 1.5kg piece pork neck
  • 12 eschalots, peeled
  • 2 small fennel bulbs, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 355ml bottle apple cider
  • 250ml chicken stock
  • 3 large pink lady apples, cored, cut into thick wedges
  • 2 tsp fresh thyme leaves
  • Steamed or mashed potato, to serve
Instructions:
  • Preheat your oven to 150C/130C fan-forced.
  • In a large flame-proof casserole dish, heat oil over medium-high heat. Add pork and sear for 8 minutes on each side until nicely browned. Remove from heat.
  • Combine eschalots, fennel, and garlic in a baking dish. Pour cider and stock over the mixture. Season with salt and pepper. Cover and bake for 2 1/2 hours. Remove from oven, add apple, and continue to bake until apple is tender, about 30 minutes. Let stand for 10 minutes before serving.
  • Slice the succulent pork, then generously sprinkle with aromatic thyme. Pair it perfectly with your choice of steamed or mashed potato.
