Tender slow-cooked pork with apple-onion topping, ideal for a satisfying fall sandwich.
Ingredients:
  • 3 (12 fluid ounce) bottles hard apple cider
  • 0.75 cup brown sugar, divided
  • 1 (2 pound) pork tenderloin
  • 0.5 cup butter
  • 1 large onion, cut into strips
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon onion powder
  • salt and ground black pepper to taste
  • 2 large Granny Smith apples - peeled, cored, and sliced
  • 6 hard rolls, split
Instructions:
  • In a slow cooker, blend hard apple cider and 1/4 cup of brown sugar until sugar is dissolved. Place pork tenderloin into the mixture.
  • Slow cook on Low for 6 hours until the pork is incredibly tender, then effortlessly shred it using a fork.
  • Approximately 20 minutes before the pork is done, melt butter in a large skillet over medium-low heat. Sauté onions in butter until nicely browned, around 10 minutes.
  • In a small bowl, mix together 1/2 cup brown sugar, cinnamon, and onion powder; season with salt and pepper. Stir in apples and the brown sugar mixture with onions in the skillet. Cover and cook until apples are tender and the sauce has thickened, approximately 10 minutes.
  • Serve rolls topped with a generous portion of shredded pork and flavorful apple-onion sauce.
