Apple and mint sauce

Tender roast pork paired with tangy apple mint sauce is a delightful combo.
Ingredients:
  • 6 large granny smith apples, peeled, cored, coarsely chopped
  • 160ml (2/3 cup) sweet white wine
  • 40.00 gm caster sugar
  • 3 tsp finely chopped fresh mint
Instructions:
  • In a medium saucepan over low heat, delicately mix together the apples, wine, and sugar until the sugar completely dissolves, approximately 5 minutes.
  • Turn up the heat to medium-high and bring the mixture to a boil. Lower the heat to low, cover the pot, and cook while stirring occasionally for 8-10 minutes until the apples have softened. Let it sit for 5 minutes to cool slightly before serving.
  • Puree apple mixture in a food processor, then transfer to a serving bowl. Stir in mint until well combined. Serve warm or chill until ready to enjoy.
