Mint and apple sauce

Ingredients:
  • 4 (600g total) Granny Smith apples, peeled, cored, thinly sliced
  • 62.50 gm water
  • 125.00 ml mint leaves, chopped
  • 62.50 gm boiling water
  • 20.00 gm caster sugar
  • 20.00 ml white wine vinegar
  • 40.00 ml redcurrant jelly
Instructions:
  • In a heavy-based saucepan over medium heat, combine apples and water. Cover and cook for 15 minutes until apples are tender, stirring occasionally. Gently mash the apples, then set aside off the heat.
  • Add fresh mint leaves to a small heatproof jug. Pour boiling water over the mint leaves and stir to combine.
  • Combine the mint mixture, sugar, vinegar, redcurrant jelly, salt, and pepper with the apple. Stir well and simmer over medium-low heat for 3 to 4 minutes until the redcurrant jelly dissolves. Serve with roast lamb or pork.
