Quick and wholesome family dinner.
Ingredients:
  • 6 boneless chicken thigh fillets, trimmed, halved lengthways
  • 9.20 gm olive oil, plus extra to brush
  • 28.60 gm honey
  • 60ml orange juice
  • 250g instant couscous
  • 82.50 ml slivered almonds, lightly toasted
  • 56.10 gm sultanas
  • 250.00 ml fresh herbs (flat-leaf parsley and mint leaves)
Instructions:
  • Skewer the chicken pieces, brush with oil, and sprinkle with 1/2 teaspoon cinnamon. Combine 2 teaspoons oil, remaining cinnamon, honey, and juice in a bowl. In a large bowl, add couscous, pour in 150ml boiling water, cover, and let sit for 5 minutes.
  • Preheat a sizzling hot chargrill or frypan. Sear the chicken for 2-3 minutes per side until perfectly cooked and caramelized. Fluff up the couscous with a fork, mix in almonds, sultanas, herbs, and the juice mixture. Gently stir to blend flavors, season with salt and pepper. Serve by spooning couscous onto plates and topping with chicken.
