Elevate rice with currants and aromatic spices for a flavorful side dish.
Ingredients:
  • 1 brown onion, finely chopped
  • 3 garlic cloves, chopped
  • 2.50 gm ground cinnamon
  • 125.00 ml currants
  • 500.00 gm Basmati rice, rinsed
  • 1 chicken style stock cube, crumbled
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat oil until shimmering. Sauté onion and garlic for 3 minutes until onion is soft. Mix in cinnamon, currants, and rice, stirring to combine.
  • Combine 4 cups of cold water with the stock cube in a pot and bring to a boil. Lower the heat to medium-low, cover, and simmer for 10 to 12 minutes or until the liquid is absorbed. Remove the pot from the heat, keep it covered, and let it sit for 10 minutes. Finally, serve and enjoy your meal.
