Kids surprise Mom with breakfast in bed - homemade pikelets.
Ingredients:
  • 150g (1 cup) plain flour
  • 12.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 40.00 gm caster sugar
  • 55g (1/3 cup) currants
  • 185ml (3/4 cup) milk
  • 1 egg, at room temperature
  • 50g (2 1/2 tbsp) butter, melted
  • Extra butter, to grease
  • Jam or honey, to serve
Instructions:
  • In a large bowl, combine sifted flour, baking powder, and cinnamon with sugar and currants. Stir until well combined, then create a well in the center.
  • In a jug, combine the milk and egg, then gradually add this mixture to the flour, stirring with a wooden spoon until it forms a smooth batter. Mix in the butter until well combined.
  • Heat the extra teaspoon of butter in a large non-stick frying pan over medium heat until it sizzles, then wipe the pan with paper towel.
  • With adult help, place spoonfuls of pikelet batter in the pan. Cook until holes form on the surface and they turn golden brown underneath. Use a spatula to flip them, then cook for another minute until done. Cool on a wire rack.
  • Continue cooking the rest of the pikelet mixture, remember to grease the pan again if needed. Enjoy serving the pikelets warm or at room temperature with your choice of jam or honey.
