Elevate your Christmas with star-shaped cinnamon date cookies – a stunning dessert.
Ingredients:
  • 5 oz (half of 10-oz container) chopped dates
  • 1 tablespoon granulated sugar
  • 2 1/2 tablespoons water
  • Dash salt
  • 1/2 cup butter or margarine, softened
  • 1/3 cup granulated sugar
  • 1 cup plus 2 tablespoons Gold Medal™ all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla
  • Powdered sugar, if desired
Instructions:
  • In a small saucepan, simmer dates, 1 tablespoon sugar, water, and salt over medium heat for 3 to 5 minutes, stirring continuously until the mixture thickens. Allow to cool completely.
  • In a medium bowl, use an electric mixer to whip the butter until creamy. Mix in 1/3 cup of granulated sugar until it becomes light and fluffy. Stir in flour, cinnamon, and vanilla until well combined. Form the dough into a ball.
  • Roll the dough to 1/8-inch thickness on a lightly floured surface. Use a 1 1/2- or 2-inch round cookie cutter to cut out the cookies. Then, cut a star in the center of half of the cookies using a 1/2-inch star-shaped cookie cutter. Pierce the remaining cookies with a fork. Place them on ungreased cookie sheets and freeze for 10 minutes.
  • Preheat oven to 300°F. Take cookies out of the freezer. Bake for 20 to 25 minutes until slightly golden brown. Let them cool for 1 minute before transferring to a wire rack. Allow to cool completely.
  • Assemble each sandwich cookie by spreading approximately 1/2 teaspoon of date filling on the bottom of one solid cookie. Top it with a cutout cookie, bottom side down, and gently press them together. Finish by sprinkling with powdered sugar.
