Cinnamon Hazelnut Biscotti

Delicious hazelnut biscotti with cinnamon, vanilla, and a wonderful coffee pairing.
Ingredients:
  • 0.75 cup butter
  • 1 cup white sugar
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 cup hazelnuts
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare your cookie sheet with a light grease or parchment paper.
  • Cream together the butter and sugar in a medium bowl until light and fluffy. Beat in the eggs and vanilla. Sift together the flour, cinnamon, baking powder, and salt, then mix into the egg mixture. Finally, stir in the hazelnuts.
  • Form the dough into two 12-inch long logs, then gently press them onto the baking sheet until they are 1/2-inch thick.
  • Bake in a preheated oven for around 30 minutes until the edges turn golden and the center is firm. Let cool on the pans. Once cooled, slice logs diagonally into 1/2-inch-thick slices using a serrated knife. Place the slices back on the baking sheet.
  • Continue baking for another 10 minutes, flipping halfway through. Let them cool completely, then store in an airtight container at room temperature.
