Cinnamon hot chocolate

Sip on this calming hot chocolate to unwind and prepare for a restful night's sleep.
Ingredients:
  • 1.5L (6 cups) milk
  • 2 x 7cm cinnamon sticks
  • 50g (1/2 cup) cocoa powder, sifted
  • 150g good-quality dark cooking chocolate, coarsely chopped
Instructions:
  • In a medium saucepan, gently simmer the milk and cinnamon over medium-low heat. Set aside for 10 minutes to enhance the flavors.
  • In a small heatproof bowl, combine the cocoa powder with 80ml (1/3 cup) of the warm milk mixture, stirring until a smooth paste forms.
  • Discard the cinnamon sticks from the milk mixture and heat the saucepan on low. Add the cocoa paste and chocolate, and whisk continuously for 5 minutes until the chocolate is melted and the mixture is smooth.
  • Transfer the mixture to a heatproof serving jug and then elegantly pour it into heatproof glasses for serving.
