Cinnamon spiced drop doughnuts with maple syrup

Delicious warm fluffy dough treats.
Ingredients:
  • 50g butter, melted
  • 140g (2/3 cup) caster sugar
  • 2 egg yolks
  • 375g (2 1/2 cups) plain flour
  • 6.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 0.63 gm ground nutmeg
  • 7.50 gm ground cinnamon
  • 375ml (1 1/2 cups) buttermilk
  • 215g (1 cup) caster sugar, extra
  • 250ml (1 cup) maple syrup
  • Canola oil, to deep-fry
Instructions:
  • In a large bowl, mix together butter, sugar, and egg yolks. In another large bowl, sift together flour, baking powder, bicarbonate of soda, nutmeg, and 1 teaspoon of cinnamon. Gradually add half of the flour mixture and half of the buttermilk to the egg mixture and stir well. Then, add the rest of the flour mixture and buttermilk, and stir until combined. Let the mixture rest for 10 minutes.
  • Mix the excess sugar and remaining cinnamon on a plate. Pour sufficient oil into a large saucepan, allowing it to reach a depth of 5cm. Heat the oil to 170C over medium-high heat; it's ready when a bread cube turns golden brown in 20 seconds.
  • Drop 4 generous spoonfuls of dough into the oil, frying until golden brown and cooked through, about 5-7 minutes. Transfer to a paper towel-lined plate using a slotted spoon. Repeat the process with the rest of the dough in 4 batches, reheating the oil each time.
  • Coat warm doughnuts in cinnamon sugar, then place them on a serving plate. Finish with a generous drizzle of maple syrup and serve right away.
