"Baked cinnamon-sugar tortilla cups filled with delicious pudding for a scrumptious Mexican dessert."
Ingredients:
  • cooking spray
  • 1 cup white sugar
  • 1.5 tablespoons ground cinnamon
  • 10 large flour tortillas, cut into quarters
  • 0.25 cup melted butter, or as needed
  • 1 cup milk
  • 1 (8 ounce) package cream cheese, softened
  • 2 (3 ounce) packages instant vanilla pudding mix
  • 1 (16 ounce) container frozen whipped topping, thawed
  • 2 tablespoons chocolate syrup, or as needed
  • 40 maraschino cherries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously spray 40 muffin cups with cooking spray.
  • Mix sugar and cinnamon until evenly blended in a small bowl.
  • Coat flour tortilla pieces with melted butter and sprinkle with cinnamon-sugar. Mold each tortilla piece into a muffin cup to create a shell.
  • Bake in the preheated oven until the tortilla shells turn a beautiful golden brown, about 8 to 10 minutes.
  • Use an electric mixer to blend milk, cream cheese, and pudding mix until velvety, then gently mix in whipped topping. Stuff each tortilla shell with approximately 1 tablespoon of the cream cheese mixture. Drizzle with chocolate syrup and garnish with a maraschino cherry on top.
