Citrus and strawberries with orange liqueur sabayon

Indulge in a decadent dessert using fresh seasonal fruit.
Ingredients:
  • 3 ruby grapefruit
  • 4 oranges
  • 3 yellow grapefruit
  • 250g (1 punnet) strawberries, washed, hulled, halved
  • 12.00 gm pure icing sugar, to dust
  • 5 egg yolks
  • 80g (1/3 cup) caster sugar
  • 80ml (1/3 cup) water
  • 60ml (1/4 cup) orange liqueur (like Grand Marnier)
Instructions:
  • Carefully peel the oranges and grapefruit, making sure to remove the white pith. Then, use the knife to cut out the segments by slicing close to the membranes on either side.
  • Combine oranges, grapefruit, and strawberries in a bowl, gently toss together, cover with plastic wrap, and refrigerate until needed.
  • For the orange liqueur sabayon, combine egg yolks and sugar in a large heatproof bowl. Use a balloon whisk to beat the mixture until pale, creamy, and the sugar completely dissolves. Stir in water and liqueur until well combined.
  • Create a double boiler by setting the bowl over simmering water, ensuring it doesn't touch the water. Whisk continuously for 8-10 minutes until the mixture thickens, turns pale, and leaves a ribbon trail when the whisk is lifted.
  • Preheat the grill to high heat.
  • Distribute the fruit evenly among six 750ml (3-cup) shallow flameproof dishes. Top with the sabayon, sprinkle with icing sugar, and grill until golden for about 1 minute. Serve hot right away.
