Colorful citrus ice pops with creamy strawberry yogurt make a refreshing and tangy summer treat.
Ingredients:
  • 0.5 cup chopped strawberries
  • 0.5 cup grapefruit juice
  • 1 cup orange juice
  • 0.25 cup water
  • 2 tablespoons lemon juice
  • 2 tablespoons white sugar
  • 1 (8 ounce) container vanilla yogurt
Instructions:
  • Combine grapefruit juice, orange juice, water, lemon juice, and sugar in a saucepan over medium heat until it comes to a boil. Stir and cook until the sugar dissolves, approximately 5 minutes. Remove from heat and chill the mixture in the freezer until very cold, around 10 minutes.
  • Combine the creamy vanilla yogurt with the fresh strawberries, then refrigerate until chilled.
  • Fill 6 ice pop molds with a spoonful of the cold juice mixture, using approximately 1 1/2 tablespoons per mold. Freeze the molds for 30 minutes to 1 hour until the juice is frozen. Add 1 tablespoon of cold strawberry yogurt to each mold, and finish by topping off with the remaining citrus juice mixture. Freeze until completely solid, which should take about 1 to 1 1/2 hours.
