Citrus-infused green tea soymilk ice pops for a crowd of ten.
Ingredients:
  • 3 cups soymilk
  • 1/3 cup sugar
  • 8 bags mint-flavored green tea
  • 1 teaspoon grated orange peel
  • 1 teaspoon grated lemon peel
  • Fresh mint leaves, if desired
Instructions:
  • Chill a square glass baking dish in the freezer. Heat 1 cup of soymilk and sugar in a saucepan until boiling. Stir in tea bags, steep for 5 minutes, then remove tea bags.
  • Combine the remaining 2 cups of soymilk, along with the orange peel and lemon peel until fully incorporated. Pour the mixture into a chilled dish and freeze for 30 minutes. Once ice crystals start to form around the edges, stir the mixture with a fork. Continue freezing for about 3 hours, stirring every 30 minutes until it is completely frozen.
  • Present the dessert in elegant bowls and top it with fresh mint leaves for the perfect finishing touch.
