Tangy citrus ice-cream tops a sweet, classic cocktail for a delightful spin.
Ingredients:
  • 2 limes
  • 42.00 gm fresh lime juice
  • 20.00 gm caster sugar
  • 80ml (1/3 cup) vodka
  • 600g peeled seedless watermelon, coarsely chopped
  • 125.00 ml fresh mint leaves
  • 4 scoops Lemon ice-cream
Instructions:
  • Zest the limes with a zester, ensuring to only capture the green outer layer for maximum flavor. If a zester is not available, you can also use a vegetable peeler to carefully remove the rind, then use a small sharp knife to trim off the white pith. Finally, thinly slice the lime rind into strips.
  • In a large bowl, mix together lime rind, lime juice, sugar, and vodka. Let it sit for 5 minutes, stirring occasionally until the sugar dissolves.
  • Combine the watermelon and mint with the vodka mixture, gently stirring to mix without breaking up the watermelon. Let it sit for 5 minutes to macerate.
  • Distribute the watermelon and syrup into serving glasses, then add a scoop of ice cream on top before serving right away for a delightful treat.
