Watermelon with pistachio dukkah

Elevate watermelon with dukkah for a flavorful and irresistible snack.
Ingredients:
  • 49.50 gm sesame seeds
  • 62.50 ml coriander seeds
  • 40.00 ml cumin seeds
  • 250.00 ml pistachio kernels
  • 2.5kg piece seedless watermelon, peeled, chilled
Instructions:
  • Toast sesame seeds, coriander seeds, cumin seeds, pistachios, salt, and pepper in a non-stick pan over medium heat, stirring until fragrant, for 4 to 5 minutes. Allow to cool.
  • Add the ingredients to a food processor and pulse until a coarse powder forms. Then, transfer the mixture to a bowl.
  • Cut the watermelon into cubes and then lightly dip the top of each cube into the dukkah. Arrange the cubes on a serving plate and serve with the extra dukkah on the side.
