Quick and easy Citrus Pork with Egg Noodles - tender pork loin strips sautéed in cumin and garlic, topped with a zesty citrus sauce, carrots, and noodles. Ideal for a delicious midweek dinner!
Ingredients:
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 pound boneless pork loin, cut into 2x1/2-inch strips
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1 cup chicken broth
  • 1/2 cup orange juice
  • 2 tablespoons cider vinegar
  • 1 teaspoon soy sauce
  • 1 1/2 teaspoonbrown sugar
  • 2 medium carrots, sliced into thin rounds (about one heaping cup)
  • 1 tablespoon cornstarch
  • 1/2 cup green onions, sliced
  • 1/2 teaspoon fresh ginger, grated
  • 1/2 pound egg noodles, cooked, drained
Instructions:
  • Combine cumin, salt, and pepper in a small bowl. Mix in the pork and garlic, ensuring they are coated well. Allow the flavors to meld while you prepare the remaining ingredients.
  • Combine the broth, orange juice, vinegar, soy sauce, and brown sugar in a bowl for the flavorful sauce. Then, whisk 1/4 cup of the sauce with cornstarch in a separate bowl to create a thickening slurry.
  • In a large skillet over medium-high heat, sauté the pork and garlic in oil until lightly browned on all sides, about 2 minutes. Remove the pork and set aside.
  • Place the pasta into the pot of boiling water and cook until it is perfectly al dente.
  • Simmer the carrots in the flavorful broth: As the pasta cooks, place the carrots in the same skillet used for the pork. Pour in all the broth mixture, except for the reserved amount. Bring to a boil, then reduce heat and simmer for 7-8 minutes.
  • Return the pork to the pan.
  • Pour and stir the cornstarch slurry into the pan to thicken the sauce.
  • Stir in the green onions and ginger, then let the mixture come to a rolling boil and simmer for an additional minute.
  • Mix the noodles well and serve right away.
