Indulgent ricotta pudding topped with vibrant mixed berries for a stunning dessert.
Ingredients:
  • 750g skim milk ricotta
  • 40.00 gm caster sugar
  • 1 orange, rind finely grated
  • 1 lemon, rind finely grated
  • 60g (1/4 cup) low-fat plain yoghurt
  • 2 egg whites
  • 250g (1 punnet) strawberries, halved if desired, to serve
  • 200g blueberries, to serve
  • 200g raspberries, to serve
  • 6.00 gm icing sugar, for dusting
Instructions:
  • Place the muslin inside a 15cm diameter plastic strainer.
  • Combine ricotta, caster sugar, orange rind, lemon rind, and yoghurt in a food processor until smooth. In a separate bowl, whip egg whites until stiff peaks form, then fold gently into the ricotta mixture. Transfer the mixture into a prepared strainer, level the surface, and place over a bowl to drain excess liquid. Cover with muslin and refrigerate overnight.
  • Turn the ricotta onto a serving plate, gently remove the muslin, place the berries around the pudding, and sprinkle with icing sugar before serving.
