Savory beef and rice stuffed red bell peppers baked with spaghetti sauce for a quick and hearty meal.
Ingredients:
  • 6 red bell peppers - tops and seeds removed
  • 3 eggs, beaten
  • 3 cups meatless spaghetti sauce
  • 1.25 cups instant rice
  • 0.25 cup finely chopped onion
  • 1 teaspoon salt
  • 1.5 teaspoons Worcestershire sauce
  • 1 pinch ground black pepper
  • 1.5 pounds lean ground beef
  • 2 cups meatless spaghetti sauce
  • 6 tablespoons shredded Cheddar cheese, divided
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Bring a large saucepan of water to a boil. Cook red bell peppers in the boiling water for about 5 minutes until slightly softened. Drain and rinse peppers with cold water.
  • Combine eggs, 3 cups of spaghetti sauce, instant rice, onion, salt, Worcestershire sauce, and black pepper in a bowl. Add crumbled ground beef and stir until well combined with the sauce and rice mixture.
  • Place the peppers upright in a large baking dish and stuff each one with the savory beef mixture. Generously pour 2 cups of spaghetti sauce over the peppers before covering the dish tightly with aluminum foil.
  • Bake uncovered in the preheated oven for 55-60 minutes until peppers are tender, filling is set, and a meat thermometer reads at least 160°F (70°C). Sprinkle 1 tablespoon of Cheddar cheese on top of each pepper before serving.
