Satisfying stuffed pepper soup - a comforting one-pot meal with ground beef, rice, and tomatoes, reminiscent of classic stuffed peppers.
Ingredients:
  • 1 pound ground sirloin
  • 1 green bell pepper, chopped
  • 1 cup finely diced onion
  • 1 (29 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (14 ounce) can chicken broth
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried sage
  • salt and pepper to taste
  • 2 cups water
  • 1 cup white rice
Instructions:
  • Collect all your delightful ingredients.
  • In a large skillet over medium-high heat, brown and crumble the ground beef for 5 to 7 minutes. Remember to drain off any excess grease before continuing.
  • Sauté green pepper and onion until the onion is soft and translucent, approximately 5 minutes.
  • Combine tomatoes, tomato sauce, broth, thyme, and sage in the pot. Season with salt and pepper. Cover and simmer until peppers are tender, for 30 to 45 minutes.
  • While you wait, bring water and rice to a boil in a saucepan. Lower the heat to medium-low, cover, and let it simmer until the rice is tender and the water is absorbed, which should take about 20 to 25 minutes.
  • Combine the fluffy cooked rice with the flavorful soup, heat it gently, and enjoy the comforting dish.
