Satisfying stuffed pepper soup blends beef, rice, and tomato sauce for a comforting meal.
Ingredients:
  • 2 tablespoons vegetable oil
  • 3 green bell peppers, diced small
  • 1 onion, diced small
  • 1 clove garlic, minced
  • 2.5 pounds ground beef
  • 3 quarts water
  • 2 (29 ounce) cans tomato sauce
  • 2 (28 ounce) cans petite diced tomatoes in juice
  • 0.5 cup ketchup
  • 0.5 cup beef base
  • 0.25 cup brown sugar
  • 0.5 teaspoon ground black pepper
  • 4 cups water
  • 2 cups brown rice
Instructions:
  • In a large pot over medium heat, sauté bell pepper, onion, and garlic in vegetable oil until soft, about 5-7 minutes. Add ground beef, breaking it into small chunks, and cook until fully browned, about 7-10 minutes. Remove excess fat and continue cooking.
  • Combine water, tomato sauce, diced tomatoes, ketchup, beef base, brown sugar, salt, and pepper with the beef mixture. Simmer and let the flavors meld for approximately 30 minutes.
  • Simmer the soup, then cook brown rice in boiling water. Once tender and all liquid has been absorbed, stir into the soup.
