Savory ground beef, green peppers, onions, and garlic simmered in a flavorful tomato soup with aromatic cinnamon and parsley, all mixed with uncooked white rice.
Ingredients:
  • 1 cup chopped onion
  • 0.25 cup chopped celery
  • 1 clove garlic, minced
  • 2 cups chopped green bell pepper
  • 2 tablespoons vegetable oil
  • 0.5 pound lean ground beef
  • 1 (16 ounce) can crushed tomatoes
  • 0.5 cup tomato juice
  • 0.25 cup uncooked white rice
  • 3 cups water
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.25 teaspoon ground cinnamon
Instructions:
  • In a skillet, gently cook onion, celery, garlic, and green pepper in oil until softened. Add beef and cook until browned, approximately 10 minutes. Mix in the rice.
  • Combine tomatoes, juice, water, parsley, sugar, salt, and pepper with the browned beef. Simmer covered for 45 minutes or until rice is cooked. Adjust liquid if needed, then stir in cinnamon. Taste for seasoning and garnish each serving with a parsley sprig.
