Classic stuffed peppers: Green bell peppers filled with savory beef and rice, topped with zesty tomato sauce.
Ingredients:
  • 4 medium green bell peppers, tops and seeds removed
  • 1 (28 ounce) can tomato sauce
  • 0.25 cup white vinegar
  • 1.5 pounds lean ground beef
  • 1 cup leftover cooked white rice
  • 0.5 cup Italian-style bread crumbs
  • 6 tablespoons grated Parmesan cheese
  • 0.25 cup finely chopped onion
  • 1 large egg, lightly beaten
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
Instructions:
  • Prepare all your ingredients. Heat a large pot of water until boiling.
  • Boil peppers until tender, about 4 to 5 minutes. Drain in a colander and cool under cold running water.
  • Combine ground beef, cooked rice, bread crumbs, 4 tablespoons of Parmesan cheese, onion, egg, garlic powder, salt, and pepper in a large bowl, mixing thoroughly until well blended.
  • Preheat the oven to 350°F (175°C), then stuff the peppers with the beef mixture.
  • Arrange the peppers in a baking dish, making sure the stuffed side is facing upward.
  • Combine tomato sauce and vinegar in a bowl, then drizzle the mixture over the peppers.
  • Finish by generously dusting the top with the remaining 2 tablespoons of Parmesan cheese.
  • Roast in the oven, brushing peppers with sauce throughout, until the beef filling is fully cooked, approximately 1 hour and 20 minutes. Use an instant-read thermometer to ensure it reaches at least 160 degrees F (70 degrees C).
