Slow-simmered Italian meat sauce with beef, pork, and sausage, perfect with fresh pasta.
Ingredients:
  • 2 ounces pancetta, finely chopped
  • 1 medium Spanish onion or yellow onion, finely chopped
  • 1 celery rib, finely chopped
  • 1 carrot, finely chopped
  • 3 tablespoons unsalted butter
  • 12 ounces ground beef
  • 4 ounces ground pork
  • 4 ounces Italian sausage, casings removed, if needed
  • Dash ground cloves
  • Dash ground cinnamon
  • 1 teaspoon freshly ground black pepper
  • 2 pounds peeled and chopped tomatoes (or one 28-ounce can whole peeled tomatoes, packed in water)
  • 1 cup whole milk
  • 1/2 teaspoon sea salt
Instructions:
  • Create a flavorful soffritto by sautéing pancetta, onion, celery, and carrot in butter over medium heat until the onion is pale gold, approximately 10 minutes.
  • Introduce the meats: Combine the beef, pork, and sausage with the soffritto, and cook until they develop a golden brown color, which takes about 5 minutes.
  • Season generously with clove, cinnamon, and pepper for a burst of flavorful spices.
  • Add the tomatoes and simmer: Stir in the tomatoes and bring to a gentle simmer over medium heat for 15 minutes. If using whole canned tomatoes, crush them as you add to the sauce.
  • Simmer for 2 1/2 hours: Add milk, season with sea salt, and simmer covered on low heat, stirring every 20 minutes. If the sauce thickens too much, just add 1/4 cup of water and deglaze the pan.
  • Adjust Seasoning and Present: Adjust seasoning of the sauce to your liking. Traditionally served with fresh tagliatelle, Bolognese pairs well with fettuccine, pappardelle, penne, or your favorite pasta. Sauce freezes perfectly for later use. Make sure to rate the recipe and share your feedback!
