Cherries jubilee: Simmered cherries with orange, flambéed with brandy, served over vanilla ice cream.
Ingredients:
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 0.25 cup cold water
  • 0.25 cup orange juice
  • 1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
  • 0.5 teaspoon finely grated orange zest
  • 3 cups vanilla bean ice cream
  • 0.25 teaspoon cherry extract
  • 0.25 cup brandy
Instructions:
  • Combine sugar and cornstarch in a wide saucepan and whisk together. Add water and orange juice, bring to a boil over medium-high heat, whisking until thickened. Mix in cherries and orange zest, return to a boil, then simmer for 10 minutes. Serve by scooping ice cream into bowls while cherries cook.
  • Take the cherries off the heat and mix in the cherry extract. Add the brandy and ignite it with a long lighter. Carefully shake the pan until the blue flame disappears. Serve the cherries over ice cream.
