Chewy toffee and dried cherries elevate classic Canadian butter tarts.
Ingredients:
  • 1 (15 ounce) package refrigerated pie crust
  • 2 cups brown sugar
  • 2 tablespoons white vinegar
  • 1 teaspoon vanilla extract
  • 0.5 cup melted butter
  • 0.75 cup dried cherries
  • 0.5 cup chopped walnuts
  • 0.5 cup toffee baking bits
Instructions:
  • Preheat oven to a toasty 450 degrees F (230 degrees C), then generously spray twelve 3-inch tart tins with cooking spray.
  • On a lightly floured surface, roll out the pie crust and use a cookie cutter to cut twelve 4-inch circles. If needed, reroll scraps. Line tart tins with the pastry circles.
  • In a bowl, whisk together eggs, brown sugar, vinegar, and vanilla until smooth. Stir in melted butter, cherries, and walnuts. Fill tart shells 2/3 full with the batter.
  • Place in the preheated oven for 10 minutes, then lower the oven temperature to 350 degrees F (180 degrees C) and bake until the crust is golden and the filling is bubbling, approximately 20 minutes more.
  • Take the tarts out of the oven and generously sprinkle them with toffee bits. Place them back in the oven and bake until the toffee bits are slightly melted, approximately 5 minutes. Allow the tarts to cool on a wire rack for around 15 minutes, then carefully remove them from the tins.
