Experience nostalgic chicken Kyiv with pommes noisettes. A golden crumb hides tender chicken, revealing a pool of garlicky butter. This easy recipe guarantees success and will transport you to European flavors.
Ingredients:
  • 150g butter, softened
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 4 chicken breast fillets
  • 250.00 ml dried breadcrumbs
  • 125.00 ml plain flour
  • Rice bran oil, for shallow frying
  • Mashed potato, to serve
  • Steamed vegetables, to serve
  • Salt, to season
Instructions:
  • Combine butter, garlic, parsley, salt, and pepper in a bowl. Mash with a fork until well mixed. Spoon mixture onto a 20cm piece of plastic wrap. Roll into a log, twisting the ends to seal. Chill in the fridge until firm, about 1 hour.
  • Make a deep pocket in each chicken breast by slicing along one side. Unwrap the butter and cut it into 16 thick slices. Stuff each pocket with 4 butter slices and secure with toothpicks to enclose the filling.
  • Spread breadcrumbs on a large plate and season with salt and pepper. Place flour on a separate plate. Whisk eggs in a shallow bowl. Coat each piece of chicken in flour, then dip in egg, and finally coat in breadcrumbs. Place the coated chicken pieces on a plate and repeat the process with the remaining chicken, flour, egg, and breadcrumbs.
  • Preheat the oven to 180°C/160°C fan-forced and grease a large baking tray. Add enough oil to cover the base of a large frying pan and heat over medium-high heat. Cook chicken in batches for 2 to 3 minutes per side until golden. Transfer the chicken to the prepared tray and bake for 20 minutes or until fully cooked.
  • Accompany with creamy mashed potatoes and a side of fresh steamed vegetables.
