Zesty chicken salad with a surprise twist of flavors from celery, bell pepper, olives, apple, and a special secret ingredient.
Ingredients:
  • For the salad:
  • 1 pound boneless, skinless (raw) chicken breasts, cut into 2 1/2-inch chunks (or 2 to 3 cups cooked chicken meat)
  • 2 stalks celery, chopped
  • 1/2 red bell pepper, seeded and chopped
  • 4 to 6 green olives, pitted and minced
  • 1/4 cup chopped red onion
  • 1/2 to 1 whole apple, cored and chopped
  • 1/3 head iceberg head lettuce, sliced and chopped
  • For the dressing:
  • 5 tablespoons mayonnaise
  • 1 tablespoon plum preserves, or any sweet berry preserve (or a lesser amount of honey)
  • 2 teaspoons fresh squeezed lemon juice
  • Salt and pepper to taste
Instructions:
  • For tender chicken, gently simmer large, salted water until boiling. Add cut chicken breast, return to a gentle simmer, then cover and let sit for at least 15 minutes.
  • Create the dressing by combining mayonnaise, preserves, and lemon juice in a large bowl. Adjust the sweetness and acidity to your preference by adding more preserves or lemon juice. Season with salt and pepper to taste.
  • Combine the diced celery, bell pepper, olives, red onion, and apple.
  • Dice the poached or cooked chicken and combine it with the dressing and vegetables.
