Master the ultimate crowd-pleasing chocolate cake for any occasion from kids' parties to elegant dinner gatherings.
Ingredients:
  • 200g plain flour
  • 20.00 gm cocoa powder
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 200g dark chocolate block, chopped
  • 225g unsalted butter, softened, chopped
  • 220g caster sugar
  • 4.40 gm vanilla extract
  • 4 eggs
  • 125ml milk
  • 150g dark chocolate
  • 125ml pure cream
  • 20g butter
  • Chocolate curls, to decorate
Instructions:
  • Preheat the oven to 160C and prepare a 24cm round springform cake pan by greasing and lining it.
  • Combine the flour, cocoa powder, baking powder, and bicarbonate of soda in a bowl. Set aside.
  • Melt the dark chocolate in a heatproof bowl over a double boiler, making sure the bowl doesn't touch the water. Let it cool slightly.
  • Cream together butter and sugar using an electric mixer until fluffy. Mix in vanilla, then add eggs one at a time, beating well after each addition. Stir in cooled chocolate until combined. Alternate adding sifted ingredients and milk in thirds until smooth.
  • Transfer the mixture into the pan and bake for 45-55 minutes until the top is risen and a skewer inserted in the center comes out clean. Let it cool in the pan on a rack for 10 minutes, then invert it onto the rack to cool completely.
  • Spread the icing generously over the cake using a warm palette knife, then adorn with elegant chocolate curls before serving.
  • Prepare a luxurious chocolate ganache by melting 150g of chopped dark chocolate combined with 125ml of pure cream and 20g of unsalted butter in a heatproof bowl placed over simmering water (ensure the bowl doesn't touch the water). Stir until smooth, then let it cool and thicken for 30 minutes before using.
  • To create chocolate curls: Spread melted chocolate thinly (2-3mm) with a palette knife on a glass chopping board or marble surface. Let it stand until nearly set at room temperature. Using a peeler or palette knife, gently shave curls towards yourself. If the chocolate is too hard and breaks, leave it in a warm place until it softens. For smaller curls, run a peeler along a side of a dark chocolate block.
