Rich chocolate cake

Irresistible classic chocolate cake.
Ingredients:
  • 400.00g good-quality dark chocolate, chopped
  • 200g butter, softened
  • 180.00 gm dark brown sugar
  • 4.40 gm vanilla extract
  • 3 eggs, at room temperature
  • 225.00 gm self-raising flour
  • 20.00 gm cocoa powder
  • 128.75 gm milk
  • Chocolate curls or shavings (optional), to serve (see note)
  • 126.25 gm thickened cream
Instructions:
  • Preheat your oven to 170°C. Grease and line a 6cm deep, 22cm round cake pan for baking.
  • Put the chocolate in a microwave-safe bowl. Microwave it on MEDIUM (50%) for 1 to 2 minutes, stirring every minute with a metal spoon until almost melted. Stir until smooth and let it cool for 10 minutes.
  • With an electric mixer, whip together butter, sugar, and vanilla until the mixture is light and fluffy. Incorporate eggs one at a time, beating well after each addition. Pour in melted chocolate and beat until fully mixed. Combine sifted flour and cocoa powder together. Gently fold in half of the flour mixture into the butter mixture, followed by half of the milk. Mix gently. Repeat with the remaining flour mixture and milk until combined. Transfer the batter into the prepared pan, smoothing the top. Bake for 50 to 60 minutes or until a skewer inserted into the center comes out clean.
  • Let cake cool in pan for 15 minutes, then transfer to a wire rack to cool. Gently spread icing on top and sides. Add chocolate curls on top, if desired. Serve and enjoy.
  • For a luscious chocolate icing, melt chocolate and cream in a microwave-safe bowl, stirring every minute until smooth. Let it sit for 30 minutes to thicken before spreading.
