Make delicious homemade fried rice with savory Chinese sausage.
Ingredients:
  • 60ml peanut oil
  • 31.50 gm light soy sauce
  • 2 eggs, lightly beaten
  • 1 lap cheong (see notes), thinly sliced
  • 1 garlic clove, thinly sliced
  • 2 tsp grated ginger
  • 1 onion, thinly sliced into wedges
  • 500.00 ml shredded choy sum
  • 125.00 ml sliced spring onion
  • 1000.00 gm cooked white rice, cooled
  • 2 tsp sesame oil
Instructions:
  • In a hot wok, swirl 1 tablespoon of oil. Combine 1/2 tablespoon of soy sauce with eggs, then pour into the wok, creating an omelette. Cook briefly until nearly set. Remove, chop into small pieces, and set aside.
  • Bring the wok back to medium-high heat, add the remaining 2 tablespoons of oil, and crisp up the lap cheong for 1-2 minutes. Transfer the lap cheong from the wok to drain on a paper towel.
  • Sauté garlic, ginger, and onion in the wok for 1 minute. Add choy sum, spring onion, and rice, stir-frying for another 1-2 minutes until greens wilt and rice is heated through.
  • Add the Chinese sausage and omelette back into the fried rice along with the sesame oil and 1 tablespoon of soy sauce. Stir-fry for 10 seconds until everything is well mixed and heated through. Serve immediately.
