Delicious Quinoa Fried Rice: A flavorful twist on classic fried rice made with eggs, veggies, and a soy sauce-based sauce, using cooked quinoa for a nutritious alternative.
Ingredients:
  • 1.5 cups water
  • 1 cup quinoa
  • salt to taste
  • 2.5 tablespoons soy sauce
  • 1.5 tablespoons teriyaki sauce
  • 0.75 teaspoon sesame oil
  • 1 tablespoon olive oil, divided
  • 2 carrots, peeled and chopped
  • 0.25 onion, chopped
  • 3 scallions, chopped, divided
  • 3 cloves garlic, minced
  • 0.5 teaspoon minced fresh ginger
  • 2 eggs, beaten
  • 0.5 cup frozen peas
Instructions:
  • In a saucepan, bring quinoa and water to a boil seasoned with salt. Simmer covered over medium-low heat until quinoa is tender and water is absorbed, for about 15 to 20 minutes. Remove from heat, let it sit for 5 minutes, then fluff with a fork. Chill in the refrigerator for at least 8 hours or overnight.
  • Combine soy sauce, teriyaki sauce, and sesame oil in a bowl, blending until sauce is well incorporated.
  • In a large skillet over high heat, heat 1 1/2 teaspoons of oil. Add carrots and onion, saute for 2 minutes. Stir in scallions, garlic, and ginger, cook until fragrant for about 2 minutes. Add remaining 1 1/2 teaspoons oil and quinoa, cook until heated through for about 2 minutes.
  • Combine the sauce with the quinoa mixture and cook it for 2 minutes, stirring consistently until everything is evenly coated.
  • Create a crater in the middle of the quinoa mixture. Pour in the eggs and scramble them until fully cooked, about 2 to 3 minutes. Toss in the peas and cook until heated through, another 2 to 3 minutes. Sprinkle in the rest of the scallion.
