Tasty gingerbread cut out cookies, low-fat with royal icing, perfect for the holidays!
Ingredients:
  • 0.5 cup butter, softened
  • 0.66666668653488 cup molasses
  • 2 eggs
  • 4 cups all-purpose flour, divided
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1 pound confectioners' sugar
  • 0.5 teaspoon cream of tartar
  • 3 egg whites
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large bowl, beat butter and brown sugar until smooth. Mix in molasses and eggs. Add 1 1/2 cups flour, baking soda, salt, allspice, cloves, cinnamon, and ginger; mix well. Gently fold in the rest of the flour by hand until a stiff dough forms.
  • Split the dough into 2 portions, then roll it out on a floured surface to 1/8-inch thickness. Cut into preferred shapes with cookie cutters and arrange the cookies 1 inch apart on ungreased baking sheets.
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Combine confectioners' sugar and cream of tartar in a medium bowl, then add in the egg whites. Using a high-speed electric mixer, beat for roughly 5 minutes until the mixture forms thick, stiff peaks. Cover with a moist cloth until you're ready to frost the cookies.
