Basic gingerbread

Elevate the holidays with a classic gingerbread recipe.
Ingredients:
  • 1 free range egg
  • 150g butter, softened
  • 110g brown sugar
  • 125ml golden syrup
  • 450g plain flour
  • 10.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 1/4 tsp ground cloves
  • 330g pkt bought royal icing (optional)
Instructions:
  • Preheat your oven to 180C and prepare 2 baking trays with parchment paper.
  • In a saucepan over medium heat, melt the butter with sugar and golden syrup, stirring constantly for 3-5 mins until butter melts and sugar dissolves. Allow to cool for 30 mins.
  • Move the butter mixture into a medium bowl. Combine with the egg using a whisk. Mix in the flour, ginger, cinnamon, nutmeg, and cloves. Knead on a lightly floured surface until smooth. Wrap the dough in plastic and chill in the fridge for 30 minutes until firm.
  • Divide the dough into quarters and roll each portion out on a lightly floured surface to a 3mm-thick disc. Cut out your desired shapes and place them on lined trays. Bake for 10-12 mins for smaller shapes or 12-15 mins for larger shapes, swapping trays halfway through, until light golden. Let cool completely on trays before serving.
  • Prepare the icing as per the instructions on the packet. Transfer the icing to a piping bag with a 2mm plain nozzle, or use a sealable plastic bag by cutting off one corner. Decorate the biscuits by piping the icing. Allow them to set for 30 minutes.
