Classic gnocchi recipe

Make fluffy gnocchi with your choice of sauce using these ingredients.
Ingredients:
  • 1kg Desiree potatoes, unpeeled (see note)
  • 2.40 gm salt
  • 115g (3/4 cup) plain flour
  • Plain flour, extra, to dust
Instructions:
  • 1. Submerge potatoes in a saucepan filled with cold water, ensuring they are completely covered. 2. Bring to a boil over high heat, then reduce to low and simmer for 30 minutes, or until potatoes are easily pierced with a skewer.
  • Allow the potatoes to cool for approximately 30 minutes, then use a small knife to peel them. If they are still too warm, consider wearing clean rubber gloves while peeling. Finally, place the peeled potatoes back in the pan.
  • Mash the potatoes until smooth, then sieve one-quarter of the mixture into a bowl. Repeat with the remaining batches. Season with salt and pepper.
  • Incorporate flour gradually until a firm, slightly sticky dough forms. Adjust with small increments of flour if necessary to prevent dough from becoming heavy.
  • Prepare a tray lined with a clean, dry tea towel and lightly dust it with flour. Divide the dough into 4 equal portions. Roll each portion on a floured surface into a 2cm-thick log.
  • Using a knife dusted with flour, slice logs into 2cm pieces. Roll each piece into a ball and arrange them on the lined tray, keeping the gnocchi separate from each other.
  • Roll each gnocchi gently over the back of a lightly floured fork to create ridges that help sauce cling and provide a classic Italian finish.
  • Bring a large shallow saucepan of water to boil, then add one-quarter of the gnocchi. They will be ready when they rise to the surface, usually in 2-3 minutes.
  • Transfer the ingredients to a baking tray using a slotted spoon, ensuring there is a small amount of cooking water left on the tray to prevent sticking.
