Classic Italian gnocchi alla sorrentina with a simple yet delicious twist; use homemade or store-bought gnocchi.
Ingredients:
  • 1.5 tablespoons extra-virgin olive oil
  • 0.5 onion, finely chopped
  • 1.5 (14.5 ounce) cans passata (crushed tomatoes)
  • salt to taste
  • 1 (18 ounce) package potato gnocchi
  • 2 tablespoons grated Parmesan cheese
  • 1 (4 ounce) ball fresh mozzarella, cubed
  • 4 fresh basil leaves
Instructions:
  • In a saucepan over medium heat, warm olive oil until shimmering. Sauté onion until tender and translucent, approximately 5 minutes. Stir in passata and salt, then let simmer on low heat as you get the gnocchi ready.
  • Boil a pot of salted water. Cook gnocchi until they float, 2 to 4 minutes. Drain.
  • Position an oven rack 6 inches below the broiler, then preheat the broiler.
  • Start by elegantly drizzling a ladle of tomato sauce into the base of a baking dish. Next, add gnocchi, the rest of the tomato sauce, and Parmesan cheese, then gently mix everything together. Finish by evenly placing cubes of mozzarella cheese on top.
  • Broil the baking dish in the oven until the mozzarella cheese is melted and the sauce has slightly reduced, for 5 to 10 minutes. Then, decorate with basil leaves before serving.
