Easy maple-mustard chicken tray bake for a quick family dinner.
Ingredients:
  • 80ml maple syrup
  • 23.40 gm Wholegrain Mustard
  • 500g pkt Roasting Vegetables with Garlic & Rosemary, chopped
  • 1 large pkt (about 1kg) Free Range RSPCA Approved Chicken Breast Fillets
  • 200g brussels sprouts, halved
Instructions:
  • Preheat the oven to 210°C. Line a large baking tray with parchment paper. In a jug, mix together the maple syrup and mustard. Cut the vegetables and garlic from the roasting kit into 2cm pieces. Spread them on the tray with the rosemary. Drizzle half of the maple mixture over them and mix well to coat evenly. Roast for 5 minutes.
  • While waiting, make 3 deep slits in each chicken fillet. Season well. Heat a large non-stick frying pan over high heat. Cook the chicken for 2 1/2 minutes on each side, or until beautifully golden brown.
  • Arrange the chicken over the vegetables on the tray and generously drizzle with the remaining maple mixture. Roast for 10 minutes, then add the Brussels sprouts to the tray and continue roasting for another 10 minutes, or until the chicken is fully cooked and the vegetables are tender.
