Upgrade classic caramel corn with bacon and bourbon for a sophisticated twist.
Ingredients:
  • 10 to 12 cups popped popcorn
  • 4 to 6 slices bacon, crisply cooked, crumbled
  • 1 cup pecan halves, toasted, chopped
  • 1/2 cup dried apples, chopped
  • 1 cup butter
  • 2 cups packed brown sugar
  • 1 cup real maple syrup
  • 1/2 cup bourbon
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking soda
Instructions:
  • Preheat your oven to 250°F and prepare 2 (15x10x1-inch) pans by lining them with cooking parchment paper.
  • Combine the popcorn, bacon, pecans, and apples in a large bowl and set aside.
  • In a 3-quart heavy saucepan, bring butter, brown sugar, and syrup to a boil while stirring constantly. Lower the heat and let it simmer for 5 minutes. Take it off the heat and mix in bourbon, vanilla, salt, and baking soda. Drizzle over the popcorn mix and toss until evenly coated. Spread the mixture in pans.
  • Bake for 45 minutes, remember to stir every 15 minutes. Allow to cool for at least 1 hour before serving. Refrigerate for storage.
