Delicious oven-baked rice pilaf is a simple and reliable upgrade to basic rice, delivering fluffy and tender results without a rice cooker.
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 0.5 medium onion, chopped
  • 2 cups long-grain white rice
  • 3 cups chicken stock
  • 1.5 teaspoons salt
  • 0.25 teaspoon cayenne pepper
  • 1 pinch saffron
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large saucepan over medium heat, melt butter and oil. Cook and stir onion until lightly browned, about 7 to 8 minutes. Remove from heat.
  • Spread the rice evenly in a 9x13-inch casserole dish, mix in the onion until well combined, and set the dish on a baking sheet.
  • In a saucepan, mingle chicken stock, salt, cayenne pepper, and saffron. Boil, then simmer on low for 5 minutes.
  • Pour the flavorful stock mixture over the rice in the baking dish, gently stir to combine, ensuring every grain is coated. Spread the mixture evenly along the bottom of the pan, then cover it tightly with heavy-duty aluminum foil to seal in all the delicious flavors.
  • Bake in the preheated oven for 35 minutes. Let it rest, covered, for 10 minutes, then fluff rice with a fork after removing the foil.
