Classic Tuna Noodle Casserole

Classic American comfort food: tuna noodle casserole with canned tuna, cream of mushroom soup, and egg noodles. Topped with crunchy potato chips for a family favorite dish.
Ingredients:
  • 12 ounces wide egg noodles
  • 1 tablespoon salt
  • 8 ounces sliced fresh mushrooms
  • 2 cups chopped broccoli (about 1/2 lb)
  • 2 (6-ounce) cans tuna, drained
  • 1 (10 3/4 oz) can Campbell's cream of mushroom soup
  • 2 1/2 cups grated cheddar cheese
  • 1/3 cup milk
  • 1 tablespoon cream
  • Salt and pepper to taste
  • 1 cup crushed potato chips
Instructions:
  • Preheat your oven to 400°F.
  • Prepare the noodles and broccoli: In a large pot, bring 4 quarts of water to a boil and add a tablespoon of salt. Add the noodles and cook on high heat until just shy of al dente. Toss in the broccoli and cook for an additional 2 minutes. Drain in a colander and set aside.
  • Dry saute the mushrooms: Cook the mushrooms in a dry pan over medium-high heat, letting them release their natural juices. Once they have cooked down and become tender (about 5 to 10 minutes), take them off the heat and set aside.
  • Caramelize the onion: While the pasta drains, melt 2 tablespoons of butter in a large oven-proof pan over medium heat. Sauté the onion until translucent.
  • Combine the pasta, broccoli, mushrooms, drained tuna, cream of mushroom soup, grated cheese, milk, and cream together in the pot. Season with salt and pepper to taste.
  • Sprinkle the crushed potato chips on top of the mixture for a delicious crunchy topping.
  • Bake at 400°F for 20 minutes until the topping is golden brown.
