Tender chicken in sun-dried tomato and white wine sauce—a sophisticated, low-fat, and quick dinner reminiscent of fine dining. Serve with roasted baby potatoes and steamed broccoli.
Ingredients:
  • 1 cup all-purpose flour
  • 4 boneless, skinless chicken breast halves
  • salt and pepper to taste
  • 2 tablespoons butter or margarine
  • 0.5 cup dry white wine
  • 0.5 cup fat-free chicken broth
  • 1 tablespoon Dijon mustard
  • 1 zucchini cut in half lengthwise, then sliced diagonally
  • 5 sun-dried tomatoes, chopped
  • 1 clove garlic
  • 1 teaspoon dill weed
  • 0.33333334326744 cup fat-free sour cream
Instructions:
  • Put the flour in a shallow dish. Season chicken with salt and pepper, coat in flour, shaking off excess. Heat butter in a large skillet over medium-high heat. Sear chicken breasts on each side until browned, around 3 minutes per side.
  • Add the chicken broth and white wine to the skillet, scraping up any flavorful chicken residue. Stir in the mustard. Cover and cook for a few minutes until the chicken is 'springy' but not fully cooked. Mix in the zucchini and sun-dried tomatoes, then season with garlic and dill weed. Cover and cook until the zucchini is tender and the chicken is cooked through, for approximately 5 to 10 minutes.
  • Transfer the chicken to a platter and set the pan aside. Incorporate sour cream into the pan juices. If the liquid has reduced significantly, mix in a splash of extra wine or broth. Season with salt, and serve the chicken with the flavorful sauce drizzled on top.
