Raspberry thyme gin cocktail with lemon and frothy egg white.
Ingredients:
  • 5 fresh raspberries
  • 1 sprig fresh thyme
  • 1.5 ounces gin
  • 1 pasteurized egg white
  • 0.75 fluid ounce simple syrup
  • 0.75 fluid ounce lemon juice
  • ice cubes
  • 1 pinch ground cinnamon
  • 1 lemon zest curl
Instructions:
  • Begin by crushing fresh raspberries and thyme in a cocktail shaker. Pour in gin, egg white, simple syrup, and lemon juice next. Shake vigorously until the mixture thickens and a strong pressure builds up. Add enough ice to half-fill the shaker and shake once more until well-chilled. Strain the cocktail into a coupe glass, then finish it off with a sprinkle of cinnamon or a lemon zest twist or fresh thyme sprig for a beautiful presentation.
