Savory baked casserole featuring chicken, bacon, tomatoes, bold blue cheese, and fresh chives.
Ingredients:
  • 1.5 cups diced tomatoes
  • 0.5 cup chopped fresh parsley
  • 0.25 cup vinaigrette
  • 12 eggs
  • 1 cup plain yogurt
  • 0.5 cup milk
  • 8 slices cooked crumbled bacon
  • 1 cup cooked chicken breast, chopped
  • 2 avocados, diced
  • 1 cup crumbled blue cheese
  • 1 tablespoon chopped fresh chives
  • ground black pepper to taste
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly oil a 9x13-inch baking dish.
  • Coat tomatoes and parsley in vinaigrette, then drain and set aside.
  • In a bowl, vigorously beat eggs, then smoothly blend in yogurt and milk. Pour the luscious egg mixture into a baking dish. Arrange tomatoes, bacon, chicken, avocados, and blue cheese evenly on top. Sprinkle with fresh chives and season generously with salt and pepper.
  • Bake in a preheated oven for 25 minutes until eggs are golden, puffed, and cooked through.
