Cock-a-leekie soup with avocado

Satisfying and nutritious dish that's budget-friendly and slimming.
Ingredients:
  • 30g unsalted butter
  • 2 large leeks (white part only), finely sliced
  • 2.50 gm mild curry powder
  • 2 large potatoes (about 450g), chopped
  • 1L (4 cups) chicken style liquid stock
  • 300ml thin cream
  • 1 small (about 100g) cooked chicken breast, shredded
  • 100.00 gm cooked white rice
  • 1 avocado, flesh diced
Instructions:
  • In a large saucepan, gently heat the oil and butter. Add sliced leek and cook for 10 minutes until softened, stirring occasionally. Stir in curry powder, then add potatoes and stock. Increase heat, boil, then simmer for 10 minutes until potatoes are tender.
  • Once the mixture has cooled a bit, use a blender to puree it in batches until it's smooth. Transfer it back to the pan, stir in the cream, and season with salt and pepper. Gently heat the dish again, incorporating the chicken and rice without bringing it to a boil. Serve in mugs or bowls, and garnish with fresh avocado on top.
