Cozy up with a comforting leek and chicken soup infused with fragrant thyme to beat the chill.
Ingredients:
  • 25g butter
  • 2 leeks, thinly sliced
  • 765.00 gm chicken style liquid stock
  • 500.00 gm water
  • 650g chicken lovely legs
  • 6 sprigs fresh thyme
  • 110.00 gm pearl barley
  • 5 fresh prunes, chopped, plus extra for serving
  • 62.50 ml fresh parsley, chopped
  • Salt and pepper, to taste
Instructions:
  • In a large saucepan over medium-high heat, melt butter with olive oil. Add leeks and sauté, stirring occasionally, until softened, about 5 minutes.
  • Combine chicken stock, water, chicken, and thyme in a pot. Simmer for 45 minutes with the lid slightly ajar. Remove chicken, chop the meat, and discard bones.
  • Add the pearl barley and simmer for 45 minutes or until it is tender.
  • Combine the chopped chicken, 5 prunes, and parsley, season to taste, and garnish with additional prunes.
